My journey in the culinary world started a long time ago when I was a child.
To avoid being too wordy I just wanted to briefly introduce myself and my path to deciding to start this blog about healthy and tasty food.
I was born in Ukraine, an amazing country in Eastern Europe with rich history and culture, including cuisine. Since I remember, I always loved to cook, and came up with different and interesting ideas about food, serving meals, decorating dishes, etc.
My first masterpiece of culinary art was “mushrooms” made from eggs and tomatoes. The foot of the mushroom was coming from an egg, and half of a tomato became the cap. The white dots on the mushroom cup were made with sour cream. Such a beautiful fly agaric, tasty, and completely harmless. Tip: do not try too hard so that it does not look too natural
I had a flashback and weird yet warm memories after finding the same recipe on the Internet couple of decades (time flies, eh) later when I lived in Cyprus.
At that time, I was just starting to explore healthy nutrition and its decisive impact on our bodies. I went through a real evolution of my stances, opinions, and beliefs. The food in my fridge and on the kitchen shelves was constantly changing: skimmed milk was replaced by full-fat and then completely giving the way to plant-based alternatives; refined sugar – bye, cane sugar – out, coconut sugar can come only around holidays and my regular candy is based on dates.
Books about nutrition’s impact on the human body filled all my bookshelves, helping me to shape my cooking philosophy (not another “innovative” diet) that is reflected in this blog.
The majority of my ingredients are plant-based (whole grains, legumes, nuts and seeds, fruits, and vegetables) and the remaining 10-20% are natural products of animal origin (mainly eggs, fish and seafood, goat cheese, and cottage cheese). You can always add your favorite animal protein to any of my recipes. Many of them go well with chicken or turkey on the side. So, meat lovers will also be satisfied.
Come join me and find here a lot of insightful articles and satisfying recipes where health and taste meet each other.
With Love,
Ella Dereza
