Selecting the Right Ingredients

Potatoes. The foundation of an exceptional Mashed Potatoes Recipe lies in selecting the right potatoes. Opt for high-quality, farm-fresh potatoes with a creamy texture, such as Yukon Gold or Russet potatoes. These varieties have a higher starch content, resulting in fluffier and smoother mashed potatoes.

Coconut Milk. When choosing coconut milk for the recipe, choose unsweetened and full-fat canned coconut milk. Full-fat coconut milk is ideal for providing a luscious and creamy texture to the mashed potatoes, while the unsweetened variety ensures the dish remains savory without any unwanted sweetness. Shake the can before using it to ensure that the coconut cream and water are well combined, as separation can naturally occur in canned coconut milk.

Seasonings & Herbs. Classic additions like garlic, salt, and pepper are a must, but feel free to experiment with other aromatic herbs such as thyme, rosemary, or chives. I like to sprinkle mashed potatoes with fresh dill or parsley.

Garlic. To infuse the Mashed Potatoes Recipe with a delightful garlic aroma, you can choose between using fresh garlic or garlic powder. Fresh garlic adds a robust and pungent flavor, while garlic powder provides a more subtle and evenly distributed garlic taste. Adjust the quantity according to your preference.

Salt and Boiling Water

Proper seasoning is essential to bring out the best flavors in the Mashed Potatoes Recipe. When boiling the potatoes, add a generous amount of salt to the water. This step not only flavors the potatoes from the inside out but also enhances the overall taste of the dish. Be mindful not to oversalt, as additional seasonings will be added later.

Health Benefits of Using Coconut Milk in Mashed Potatoes Recipe

  1. Dairy-Free and Lactose-Free: Coconut milk is an excellent alternative for those who are lactose intolerant or follow a dairy-free diet. Traditional mashed potatoes often rely on butter and milk for creaminess, but using coconut milk allows individuals with dairy sensitivities to enjoy a velvety texture without discomfort.
  2. Medium-Chain Triglycerides (MCTs): Coconut milk contains medium-chain triglycerides, a type of healthy fat that is quickly absorbed and used for energy by the body. MCTs have been associated with various health benefits, including improved brain function, increased satiety, and better weight management.
  3. Immune-Boosting Properties: Coconut milk contains lauric acid, a fatty acid with antimicrobial and antiviral properties. Lauric acid can help strengthen the immune system and protect the body against infections and harmful pathogens.
  4. Antioxidants: Coconut milk contains antioxidants such as vitamin C and E, which help protect cells from oxidative stress and reduce inflammation in the body.

REMEMBER that individual tolerance to coconut milk varies, and many people can enjoy it without experiencing any adverse effects. As with any food or ingredient, moderation is key. If you have specific health concerns or dietary restrictions, it’s always best to consult with a healthcare professional or registered dietitian before making significant changes to your diet.

Non-Dairy Milk Alternatives (Optional)

If you desire a lighter consistency or wish to adjust the creaminess of the mashed potatoes, consider adding a small amount of non-dairy milk alternatives such as almond milk or oat milk. These options can lend a subtle nuttiness to the dish while keeping it dairy-free.

Equipment

  • 1 saucepan

Ingredients

  • 2,2 lb potatoes 1 kg
  • 5 oz full-fat & unsweetened coconut milk (from the can) 150 ml
  • 1/8 tsp garlic powder optional
  • Salt & pepper to taste
  • Fresh herbs to serve (dill, parsley, cilantro)

Instructions

  • Peel the potatoes and cut them into even pieces (about 1.5 to 2 inches).
  • Place the potato chunks in a large pot and add enough cold water to cover them completely.
  • Season the water with a generous amount of salt. Bring to a boil, and cook the potatoes for 20 minutes, or until soft.
  • Once the potatoes are cooked, carefully drain the water from the pot using a colander or a strainer. Reserve 1 cup of cooking liquid (optional).
  • Return the drained potatoes to the pot and let them sit for a minute or two. This allows any excess moisture to evaporate, resulting in fluffier mashed potatoes.
  • Mash them using a potato masher. Gradually incorporate the coconut milk, seasonings, and other desired ingredients. Add a little bit of cooking liquid as well (optional). Enjoy!

Notes

  1. Select high-quality, starchy potatoes for the best results. Yukon Gold or Russet potatoes work well for mashed potatoes due to their creamy texture.
  2. Depending on your preference, you can leave the skin on for added texture and nutrients. If you choose to leave the skin on, make sure to scrub the potatoes clean.
  3. Add a generous amount of salt to the water. This helps to season the potatoes from the inside out, enhancing their flavor.Cook the potatoes for about 15-20 minutes or until they are fork-tender. You can test the doneness by inserting a fork or knife into a potato chunk. If it slides in easily with little resistance, the potatoes are ready.
