Ingredients
  

  • 2,2 lb potatoes 1 kg
  • 5 oz full-fat & unsweetened coconut milk (from the can) 150 ml
  • 1/8 tsp garlic powder optional
  • Salt & pepper to taste
  • Fresh herbs to serve (dill, parsley, cilantro)

Instructions
 

  • Peel the potatoes and cut them into even pieces (about 1.5 to 2 inches).
  • Place the potato chunks in a large pot and add enough cold water to cover them completely.
  • Season the water with a generous amount of salt. Bring to a boil, and cook the potatoes for 20 minutes, or until soft.
  • Once the potatoes are cooked, carefully drain the water from the pot using a colander or a strainer. Reserve 1 cup of cooking liquid (optional).
  • Return the drained potatoes to the pot and let them sit for a minute or two. This allows any excess moisture to evaporate, resulting in fluffier mashed potatoes.
  • Mash them using a potato masher. Gradually incorporate the coconut milk, seasonings, and other desired ingredients. Add a little bit of cooking liquid as well (optional). Enjoy!

Notes

  1. Select high-quality, starchy potatoes for the best results. Yukon Gold or Russet potatoes work well for mashed potatoes due to their creamy texture.
  2. Depending on your preference, you can leave the skin on for added texture and nutrients. If you choose to leave the skin on, make sure to scrub the potatoes clean.
  3. Add a generous amount of salt to the water. This helps to season the potatoes from the inside out, enhancing their flavor.Cook the potatoes for about 15-20 minutes or until they are fork-tender. You can test the doneness by inserting a fork or knife into a potato chunk. If it slides in easily with little resistance, the potatoes are ready.
