Ingredients
- 500g (17.6 oz) celeriac, peeled and diced
- 500g (17.6 oz) potatoes, peeled and diced
- 1/4 teaspoon onion powder
- 1/8 teaspoon garlic powder
- Freshly grated nutmeg, to taste
- Salt and pepper, to taste
- 2-3 tablespoons low-fat milk (or milk substitute)
- 2 tablespoons extra virgin olive oil or unsalted butter
- Chopped fresh parsley, for garnish
How To Prepare
In a large pot, add the diced celeriac and potatoes. Cover with water, add a pinch of salt, and bring to a boil. Cook until both the celeriac and potatoes are tender, about 15-20 minutes.
Drain the cooked celeriac and potatoes and return them to the pot. Use a potato masher or a fork to mash them until smooth.
Add the onion powder, garlic powder, and freshly grated nutmeg to the mashed celeriac and potatoes. Season with salt and pepper to taste. Mix well to combine the flavors.
In a small saucepan, heat the olive oil (or melt the butter) over medium heat. Pour it into the mashed celeriac and potatoes. Add the low-fat milk gradually, mixing continuously, until you achieve the desired creamy consistency.
Taste the mash and adjust the seasoning if necessary. Add more nutmeg, salt, or pepper according to your preference. If the mash is too thick, you can add a bit more milk.
Transfer the celeriac and potato mash to a serving bowl. Garnish with chopped fresh parsley, if desired.
