Chicken Mushroom Casserole Recipe

Ingredients for Chicken Mushroom Casserole

14 oz (400 g) chestnut mushrooms – Feel free to mix and match different mushroom varieties to create a casserole that suits your taste preferences.

4 chicken legs -If you prefer leaner meat, chicken breasts can be used. Ensure not to overcook them to maintain their tenderness.

3 medium onions

1-2 Tbsp avocado oil

1 cup sour cream / 250 g – If you’re looking for a richer option, heavy cream can be used as a substitute. Keep in mind that it will alter the flavor slightly.

5 oz (150 g) of Cheese – mild and melty cheese works best. Cheddar, mozzarella, or Gruyère are excellent choices.

Cooking Instructions

  1. Preheat the Oven:
    • Begin by preheating your oven to 180°C.
  2. Prepare the Mushrooms:
    • Slice the mushrooms and dry-fry them with pepper in a pan for 7-8 minutes until they turn a delightful golden brown. Remove them from the pan.
  3. Sauté Onions:
    • While the mushrooms are cooking, thinly slice the onions.
    • In the same pan, sauté the onions in oil or butter for 5-7 minutes. Add a splash of water if the pan gets too dry.
    • Reintroduce the mushrooms when the onions are soft and golden brown.
  4. Cook the Chicken Legs:
    • Place the pot on the stove over medium-high heat. Bring the water to a boil.
    • Once the water is boiling, carefully add the chicken legs to the pot. Make sure the water covers the chicken legs.
    • Reduce the heat to low or medium-low to maintain a gentle simmer. Cover the pot with a lid.
    • Chicken legs generally take about 30 to 40 minutes to cook through when boiled. However, cooking times may vary depending on the size of the chicken legs and your stove’s heat.
    • To ensure the chicken legs are cooked, use a meat thermometer to check the internal temperature. It should reach at least 165°F (74°C).
    • Once the chicken legs are fully cooked, turn off the heat and carefully remove them from the pot.
    • Cut the chicken legs into small pieces and add to the onion and mushroom mixture.
    • Pour in the sour cream and cook for an additional 2 minutes.
  5. Assemble and Bake:
    • Transfer the chicken and mushroom sauce into a baking dish.
    • Sprinkle the grated cheese evenly over the top.
    • Place the dish in the middle of the oven and bake for approximately 10-15 minutes, or until the casserole is golden brown and thoroughly cooked.
    • Enjoy straight from the oven!

The Art of Pairing Fresh Herbs with Dishes

Feel free to customize the serving options based on your preferences and the occasion.

Tips and Variations

  • Experiment with different mushroom varieties based on seasonal availability. Consider using wild mushrooms, portobello, or shiitake to add unique flavors and textures to your casserole.
  • Elevate the dish by incorporating fresh or dried herbs such as thyme, rosemary, or tarragon. A herb-infused oil can also be used during the sautéing process for an extra layer of aromatic goodness.
  • For garlic enthusiasts, add minced garlic to the mushroom and onion sauté. This imparts a robust, savory flavor that complements the dish beautifully.
  • Introduce a touch of heat by incorporating red pepper flakes or Hot Sauce Adjika into the mushroom and chicken mixture. This adds a subtle kick that enhances the overall flavor profile.
  • Depending on your oven and the size of the chicken pieces, the baking time may vary. Keep an eye on the dish, and adjust the cooking time accordingly to achieve the desired golden-brown finish.
  • Prepare the dish up to the baking step and refrigerate it. This allows for easy, stress-free dinners during busy weekdays. Simply pop it in the oven when ready to enjoy.
  • Turn this recipe into individual servings by using smaller baking dishes or ramekins. This is a great option for dinner parties or when you want to impress guests with personalized portions.
