It’s a tradition in Cyprus to enjoy this dish on Mondays, kicking off the week on a healthy note. They call it “ospria,” which refers to dishes made with beans and legumes. And they eat “ospria” on Mondays.

Brown Lentil Stew

Ingredients for Brown Lentil Stew

  • 1 cup brown lentils, rinsed
  • 1 carrot, diced
  • 1 onion, diced
  • 1 celery stalk, diced
  • 2-3 Tbsp avocado oil or olive oil (you can also use ghee)
  • 3 cups vegetable broth or chicken broth (use more or less, depending on your preferences). Keep in mind that the stew will thicken as it cools.
  • Sweet paprika, smoked paprika, garlic powder and any other spices to your preferences (to taste)
  • Salt and pepper to taste
  • Greek yogurt or tzatziki for serving

Instant Pot Cooking Instructions

  • Set the Instant Pot to the “Sauté” mode and add avocado/olive oil.
  • Once the oil is heated, add diced onions, celery, and carrots, and sauté for 3-4 minutes until softened.
  • Add rinsed brown lentils, vegetable broth, spices, salt, and pepper to the Instant Pot.
  • Close the lid and set the Instant Pot to “Pressure Cook” mode for 12 minutes on high pressure.
  • Once the cooking time is complete, allow for a natural pressure release for 10 minutes, then carefully perform a quick pressure release.
  • Open the lid and stir the stew. If desired, adjust the seasoning to taste.
  • Serve and Enjoy!

  • In a large pot, heat avocado/olive oil over medium heat. Add the diced onion, celery, and carrot and sauté until they start to soften, about 5 minutes.
  • Add the rinsed brown lentils to the pot and stir to combine with the vegetables.
  • Add herbs and spices. Pour in the vegetable broth and bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover the pot, and let the stew simmer for about 20-25 minutes, or until the lentils are tender.
