It’s a tradition in Cyprus to enjoy this dish on Mondays, kicking off the week on a healthy note. They call it “ospria,” which refers to dishes made with beans and legumes. And they eat “ospria” on Mondays.

Ingredients for Brown Lentil Stew
- 1 cup brown lentils, rinsed
- 1 carrot, diced
- 1 onion, diced
- 1 celery stalk, diced
- 2-3 Tbsp avocado oil or olive oil (you can also use ghee)
- 3 cups vegetable broth or chicken broth (use more or less, depending on your preferences). Keep in mind that the stew will thicken as it cools.
- Sweet paprika, smoked paprika, garlic powder and any other spices to your preferences (to taste)
- Salt and pepper to taste
- Greek yogurt or tzatziki for serving

Instant Pot Cooking Instructions
- Set the Instant Pot to the “Sauté” mode and add avocado/olive oil.
- Once the oil is heated, add diced onions, celery, and carrots, and sauté for 3-4 minutes until softened.
- Add rinsed brown lentils, vegetable broth, spices, salt, and pepper to the Instant Pot.
- Close the lid and set the Instant Pot to “Pressure Cook” mode for 12 minutes on high pressure.
- Once the cooking time is complete, allow for a natural pressure release for 10 minutes, then carefully perform a quick pressure release.
- Open the lid and stir the stew. If desired, adjust the seasoning to taste.
