Brown Lentil Stew: Instant Pot Recipe (with gas-stove cooking option)
Brown Lentil Stew with Greek Yogurt is a classic dish straight from the Mediterranean island of Cyprus. Inspired by my time living in Cyprus, this recipe holds a special place in my heart, and in my kitchen.
Instant Pot Cooking InstructionsSet the Instant Pot to the "Sauté" mode and add avocado/olive oil. Once the oil is heated, add diced onions, celery, and carrots, and sauté for 3-4 minutes until softened.
Add rinsed brown lentils, vegetable broth, spices, salt, and pepper to the Instant Pot. Close the lid and set the Instant Pot to "Pressure Cook" mode for 12 minutes on high pressure.
Once the cooking time is complete, allow for a natural pressure release for 10 minutes, then carefully perform a quick pressure release. Open the lid and stir the stew. If desired, adjust the seasoning to taste.

Gas-Stove Cooking InstructionsIn a large pot, heat avocado/olive oil over medium heat. Add the diced onion, celery, and carrot and sauté until they start to soften, about 5 minutes.
Add the rinsed brown lentils to the pot and stir to combine with the vegetables. Add herbs and spices. Pour in the vegetable or chicken broth and bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the pot, and let the stew simmer for about 20-25 minutes, or until the lentils are tender. Season with salt and pepper to taste.
Serve the brown lentil stew hot, topped with a dollop of Greek yogurt or tzatziki on the side.Pair with a beetroot salad and anchovies for a Mediterranean-inspired meal.
