Great Combo for Any Occasion

I usually serve this salad with other full-flavored appetizers: Simple Marinated Eggplant Appetizer and Garlicky Spinach with Sesame Oil. This trio is delectable!

Garlicky Carrot Salad
Equipment
- 1 hand grater
- 1 salad bowl
Ingredients
- 2 big carrots (2 cups shredded carrots)
- 1-2 cloves of garlic
- 5-6 Tbsp vegan mayo (or mayo of your choice )
Instructions
- Peel and grate the carrots. Press the garlic.
- In a mixing bowl, combine the shredded carrots and vegan mayo.
- Add the pressed garlic and mix well until the carrots are evenly coated.
- Season with salt and pepper to taste.
- Chill in the refrigerator for 10-15 minutes if desired, then serve fresh.
