(2 cups shredded carrots)

cloves of garlic

vegan mayo
(or mayo of your choice )
Instructions
Peel and grate the carrots. Press the garlic.
In a mixing bowl, combine the shredded carrots and vegan mayo.
Add the pressed garlic and mix well until the carrots are evenly coated.
Season with salt and pepper to taste.
Chill in the refrigerator for 10-15 minutes if desired, then serve fresh.
