Ingredients
  

  • 3 free-range eggs
  • 400 g cottage cheese 14 oz
  • 1 medium orange juice and zest
  • 6 Tbsp coconut sugar
  • 130 g organic wheat semolina 4-5 oz
  • 1 big pear
  • Butter to grease the baking form

Instructions
 

  • Preheat oven to 350° F (175°C). Grease a deep baking dish with butter and sprinkle with semolina or almond flour. Shake off the excess.
  • Zest and juice the medium orange.
  • In a large mixing bowl beat eggs with sugar and orange juice with a mixer until light foam.
  • Stir in the cottage cheese, wheat semolina, and orange zest. Mix the ingredients thoroughly until you have a smooth and well-incorporated mixture.
  • Allow the mixture to rest for about 10 minutes. This will give the semolina time to absorb some of the liquid and thicken the mixture.
  • Pour the cottage cheese mixture into the greased baking form, spreading it out evenly.
  • Cut the pear in half and then into 1 cm thick slices, removing the core. Arrange the pear slices on the dough with a slight overlap.
  • Place the baking form in the preheated oven and bake for approximately 40-45 minutes or until the casserole is set and has a golden-brown color on top.
  • Once baked, remove the casserole from the oven and let it cool completely. It will continue to set as it cools.
  • Serve with your favorite yogurt, sugar-free jam, and roasted hazelnuts.
