Ingredients
  

  • 2 cups cooked pinto beans
  • 4 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 6-8 sun-dried tomatoes form a jar, chopped
  • 2 Tbsp avocado oil
  • 1 cup oat cream (or cow's cream)
  • Bunch of fresh dill, chopped
  • 1 green onion, thinly sliced
  • Smoked paprika, to taste
  • Salt and pepper, to taste

Instructions
 

  • In a skillet, heat avocado oil over medium heat. Add minced garlic and chopped onion, sauté until fragrant and onions are translucent, about 2-3 minutes.
  • Add chopped sun-dried tomatoes to the skillet and cook for an additional 1-2 minutes. Stir in cooked pinto beans and oat cream (or cow's cream). Cook until the beans are heated through and the mixture is creamy, about 5 minutes. If the mixture is too thick, you can add a splash of water or more cream.
  • Season with smoked paprika, salt, and pepper to taste. Adjust seasoning as needed.
  • Meanwhile, toast your favorite bread slices until golden brown. Spread the creamy pinto bean mixture generously over the toast. Garnish with fresh dill and sliced green onion.
  • Serve hot and enjoy your creamy pinto beans with oat cream on toast!
