Ingredients
  

  • 1 cup almond flour
  • 1 Tbsp almond butter or peanut butter
  • 1 cup Medjool dates (pitted) about 12 dates
  • 1/4 cup shredded coconut unsweetened
  • 4 Tbsp cocoa powder unsweetened
  • 1/2 cup walnuts
  • Pinch of salt

Instructions
 

  • Start by soaking the Medjool dates in warm water for about 10-15 minutes to soften them if they're not already soft and moist.
  • While the dates are soaking, you can toast the shredded coconut in a dry skillet over low heat for a few minutes until it turns lightly golden. This step is optional but adds a nice flavor to your energy balls.
  • In a food processor, combine the almond flour, soaked and drained Medjool dates, toasted shredded coconut, cocoa powder, nut butter, and walnuts. Add a pinch of salt for a flavor boost.
  • Process the mixture until it forms a sticky and crumbly dough. You may need to stop and scrape down the sides of the food processor bowl to ensure all the ingredients are well incorporated.
  • Take small portions of the mixture and roll it between your hands to form bite-sized energy balls. You can make them as big or small as you like. Around 12 balls.
  • If desired, roll the energy balls in some extra shredded coconut or cocoa powder for a decorative touch.
  • Place the energy balls on a tray or plate lined with parchment paper and refrigerate for about 30 minutes to firm them up.
