Start by soaking the Medjool dates in warm water for about 10-15 minutes to soften them if they're not already soft and moist.
While the dates are soaking, you can toast the shredded coconut in a dry skillet over low heat for a few minutes until it turns lightly golden. This step is optional but adds a nice flavor to your energy balls.
In a food processor, combine the almond flour, soaked and drained Medjool dates, toasted shredded coconut, cocoa powder, nut butter, and walnuts. Add a pinch of salt for a flavor boost.
Process the mixture until it forms a sticky and crumbly dough. You may need to stop and scrape down the sides of the food processor bowl to ensure all the ingredients are well incorporated.
Take small portions of the mixture and roll it between your hands to form bite-sized energy balls. You can make them as big or small as you like. Around 12 balls.
If desired, roll the energy balls in some extra shredded coconut or cocoa powder for a decorative touch.
Place the energy balls on a tray or plate lined with parchment paper and refrigerate for about 30 minutes to firm them up.Enjoy!
