Ingredients
  

  • 3 cups shredded purple cabbage
  • 1 cup shredded carrots
  • ½ red bell pepper, thinly sliced
  • 2 green onions, chopped
  • 2 Tbsp chopped cilantro
  • 2 Tbsp lime juice
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp honey or maple syrup
  • 2 extra virgin olive oil
  • Tbsp Salt & pepper, to taste

Instructions
 

  • Prepare the vegetables: In a large bowl, combine the shredded cabbage, carrots, sliced red bell pepper, and chopped green onions.
  • Make the dressing: In a small bowl, whisk together the lime juice, apple cider vinegar, honey or maple syrup, olive oil, salt, and pepper.
  • Toss together: Pour the dressing over the vegetables and mix well until everything is evenly coated.
  • Let flavors meld: Allow the slaw to rest for about 10 minutes before serving.
  • Serve: Enjoy as a topping for tacos, sandwiches, or as a fresh, crunchy side dish.
