Ingredients
  

  • 18 oz organic chicken liver 500 g
  • 1 medium leek/white onion 1 cup chopped
  • 1-2 Tbsp avocado oil
  • 1 cup oat cream or dairy cream fresh
  • 1/2 Tbsp mustard
  • Salt & pepper to taste
  • Fresh herbs for serving

Instructions
 

  • Clean the leek thoroughly and slice it thinly, or dice the white onion. Rinse the chicken livers under cold water, remove any connective tissues or membranes, and pat them dry with paper towels.
  • In a saucepan, heat the avocado oil over medium heat. Add the sliced leek or diced white onion to the heated oil. Sauté until they turn translucent and fragrant, stirring occasionally to prevent burning, about 3-4 minutes.
  • Add the cleaned chicken livers. Allow them to brown on one side for about 2-3 minutes before flipping them to brown on the other side. Cook until they are no longer pink in the center but still tender, about 7-10 minutes in total. Do not overcook, as livers can become tough.
  • Pour in the oat fresh cream and gently stir, incorporating all the flavors. Let it cook for a minute or two. Stir in the mustard. Taste and adjust the seasoning if necessary, adding salt and pepper to taste.
  • Remove the pan from heat. If desired, plate the creamy chicken livers in oat cream sauce, garnishing with fresh herbs or a sprinkle of black pepper.
