Ingredients
  

  • 1 small apple, peeled, cored, and chopped
  • 2 large eggs (or 3 small)
  • cup coconut sugar (or regular sugar)
  • ½ cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 cup whole wheat flour (or oat flour for gluten-free)
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt
  • cup chopped walnuts (optional)
  • 2 Tbsp milk (if batter is too thick)
  • Powdered sugar for dusting (optional)

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9-inch pie dish or line with parchment paper.
  • Mix wet ingredients: In a large bowl, whisk eggs, coconut sugar, Greek yogurt, and vanilla until smooth.
  • Add dry ingredients: Stir in flour, baking powder, cinnamon, and salt until just combined. If the batter is too thick, add 2 tbsp milk.
  • Fold in apples and walnuts until evenly mixed.
  • Pour batter into the prepared dish and spread evenly.
  • Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  • Cool for 10 minutes, then dust with powdered sugar if desired.
  • Slice & enjoy warm!
