Heat a griddle or non-stick pan over medium heat. If necessary, lightly grease the surface with cooking spray or a small amount of oil.
In a mixing bowl, beat the eggs. Add almond milk, maple syrup, and avocado oil to the beaten eggs. Mix well until all ingredients are thoroughly combined.
In a separate bowl, whisk together whole wheat flour, baking powder, and a pinch of salt.
Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be cautious not to overmix; a few lumps are okay
Allow the batter to rest for about 5-10 minutes. This resting period contributes to fluffier pancakes.
Pour 1/4 cup of batter onto the preheated griddle for each pancake. Cook until bubbles form on the surface, and the edges start to look set.
