Ingredients
  

  • 2 eggs
  • 1 1/2 cups almond milk
  • 3 Tbsp maple
  • 3 Tbsp avocado oil
  • 1/2 tsp baking powder
  • 2 cups whole wheat flour
  • Pinch of salt

Instructions
 

  • Heat a griddle or non-stick pan over medium heat. If necessary, lightly grease the surface with cooking spray or a small amount of oil.
  • In a mixing bowl, beat the eggs. Add almond milk, maple syrup, and avocado oil to the beaten eggs. Mix well until all ingredients are thoroughly combined.
  • In a separate bowl, whisk together whole wheat flour, baking powder, and a pinch of salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be cautious not to overmix; a few lumps are okay
  • Allow the batter to rest for about 5-10 minutes. This resting period contributes to fluffier pancakes.
  • Pour 1/4 cup of batter onto the preheated griddle for each pancake. Cook until bubbles form on the surface, and the edges start to look set.
  • Flip the pancakes and cook the other side until golden brown. Remove the pancakes from the griddle and serve warm.
  • Top with your favorite toppings, such as fresh fruit, a drizzle of maple syrup, or a dollop of yogurt.

Notes

1. You can expect to make approximately 12 to 16 medium-sized pancakes. If you prefer smaller pancakes, you might yield around 20 pancakes, and if you go for larger pancakes, the number may be closer to 8 to 10.
