Ingredients
  

  • 4 cups watermelon, cubed (seedless)
  • 1 cup fresh blueberries
  • 1 large cucumber, thinly sliced or chopped
  • ½ cup crumbled feta
  • 2-3 Tbsp fresh mint, chopped or torn
  • 2 Tbsp fresh lime juice
  • 1 Tbsp honey or agave syrup (optional)
  • Pinch of salt (optional)

Instructions
 

  • In a large bowl, combine the cubed watermelon, blueberries, and sliced cucumber.
  • Add the fresh mint and feta cheese.
  • In a small bowl, whisk together lime juice and honey (if using).
    Drizzle the dressing over the salad.
  • Gently toss everything together until evenly coated.
    Taste and add a pinch of salt if desired.
  • Chill for 10–15 minutes before serving, or serve immediately.
