Ingredients
  

  • 1 cup fresh basil leaves (packed) 30 g
  • 1 Tbsp lemon juice
  • 3 Tbsp roasted pine nuts 30 g
  • 1 clove of garlic
  • 3-4 Tbsp extra virgin olive oil
  • 2 oz matured goat cheese 50 g

Instructions
 

  • Start by gently washing the fresh basil leaves under cold water to remove any impurities. Pat them dry with paper towels or a clean kitchen cloth.
  • In a dry skillet over medium heat, toast the pine nuts until they turn golden brown and release a nutty aroma. This should take about 2-3 minutes. This step is optional. You can use unroasted pine nuts as well.
  • In a food processor, combine the fresh basil, roasted pine nuts, garlic, and goat cheese. Add 1 tablespoon of lemon juice.
  • Start blending the ingredients at a low speed, gradually drizzling in the extra virgin olive oil.
  • Blend until the mixture reaches a smooth, creamy consistency. You can adjust the olive oil quantity to achieve your desired thickness.
  • Taste the pesto and adjust the seasoning if necessary. You can add a pinch of salt or a bit more lemon juice to balance the flavors.
