Ingredients
  

  • 6 cups frozen green peas
  • 1 big potato, diced
  • 1 big carrot, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic
  • 2 Tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp dried herbs (such as thyme, rosemary, or oregano)
  • 1 bay leaf
  • 2 Tbsp avocado oil
  • 3 cups vegetable broth or water recipe for vegetable broth is here
  • Salt and pepper to taste
  • Greek yogurt or Cashew Cream for serving

Instructions
 

  • Instant Pot Cooking Instructions
  • Press the "Sauté" button on the Instant Pot and heat the avocado oil. Add chopped onions and minced garlic. Sauté until onions are translucent and garlic is fragrant.
  • Add diced potatoes, sliced carrots, and frozen green peas to the pot. Stir well to combine. Stir in tomato paste and dried herbs. Cook for another 2-3 minutes.
  • Pour in vegetable broth or water, ensuring that the vegetables are submerged.Season with salt and pepper to taste. Close the lid of the Instant Pot and set the valve to the sealing position. Cook on high pressure for 5 minutes.
  • Once the cooking cycle is complete, allow the pressure to release naturally for 5-7 minutes, then carefully do a quick release of any remaining pressure. Open the lid and give the stew a stir. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh herbs and Greek yogurt/Cashew Cream
