1whole Sea bass, cleanedapproximately 1 pound or 450 grams
1/2eggplant, thinly sliced
1bulb garlic, cut in half
1cupcherry tomatoes
1/2lemon, sliced into wedges
2-3sprigs of fresh rosemary
3-4Tbspavocado oilor olive oil
Any herbs and spices of your choice
Salt and pepper to taste
Instructions
Preheat your oven to 356°F/180°C. Lightly grease a baking dish with olive oil or avocado oil.
Arrange the thinly sliced eggplant in an even layer at the bottom of the baking dish. Season the eggplant with salt and pepper, then drizzle with a bit of avocado oil.
Place the sea bass on top of the bed of eggplant. Season the sea bass generously with salt, pepper, and chopped fresh rosemary. Nestle the halved garlic bulbs, cherry tomatoes, and lemon wedges around the sea bass. Drizzle the entire dish with a bit more avocado or olive oil for extra flavor and moisture.
Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the sea bass is cooked through and flakes easily with a fork, and the vegetables are tender and caramelized.
