Ingredients
  

For the Salad:

  • 1 medium head of cauliflower, cut into florets
  • 2 Tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • cup almonds, toasted & chopped
  • cup dried cranberries (or pomegranate seeds)
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • 3 oz goat cheese, crumbled (or feta)
  • 2 cups arugula or baby spinach
  • Salt and pepper to taste

For the Dressing:

  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp lemon juice
  • 1 Tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • 1 small garlic clove, minced
  • Salt & black pepper, to taste

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Toss cauliflower florets with olive oil, smoked paprika, cumin, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden and crispy. Let cool slightly.
  • In a small bowl or jar, whisk together olive oil, lemon juice, honey, Dijon mustard, garlic, salt, and pepper.
  • In a large bowl, toss roasted cauliflower with almonds, pomegranate seeds, parsley, mint, and arugula. Drizzle with dressing and gently toss. Top with crumbled goat cheese.
  • Serve immediately or let the flavors meld together for 10–15 minutes before eating.
