Ingredients
  

  • 200 g pasta (spaghetti, penne, or your favorite) (7 oz)
  • 4-5 strips of bacon, chopped
  • 2 cups cherry tomatoes, halved (or 3–4 Roma tomatoes)
  • 2 garlic cloves, minced
  • 1 Tbsp extra virgin olive oil (optional, if bacon isn’t too fatty)
  • ½ cup heavy cream
  • Salt and black pepper, to taste
  • Grated parmesan, fresh basil, or parsley (for garnish)

Instructions
 

  • Bring a pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain.
  • In a large skillet over medium heat, cook chopped bacon until crispy. Remove and set aside on a paper towel-lined plate. Leave about 1 tbsp of bacon fat in the pan (or add olive oil if needed).
  • In the same pan, sauté minced garlic for 30 seconds. Add cherry tomatoes and cook for 5–7 minutes until softened and slightly blistered. Season with salt, pepper, and optional chili flakes.
  • Pour in ½ cup of heavy cream and stir well. Simmer for 2–3 minutes until the sauce thickens slightly.
  • Add the drained pasta to the skillet along with the sauce. Toss well to combine, adding a splash of reserved pasta water to help the sauce coat the noodles.
  • Plate the pasta and top with grated parmesan, fresh basil, or parsley if desired. Serve hot and enjoy!

Notes
