Ingredients
  

For the Salad:

  • 4-5 ripe tomatoes (heirloom or vine-ripened)
  • 2 balls of burrata cheese
  • Fresh basil leaves, for garnish
  • Optional: arugula or mixed greens

For the Peach Dressing:

  • 1 ripe peach, peeled and pitted
  • 2 Tbsp extra-virgin olive oil
  • 1 Tbsp white balsamic vinegar or apple cider vinegar
  • 1 tsp honey or maple syrup
  • Salt and freshly cracked black pepper, to taste

Optional Garnishes:

  • Toasted pine nuts or almonds
  • Drizzle of balsamic glaze

Instructions
 

  • Wash and slice the tomatoes into even pieces. Arrange them on a large serving platter or in a bowl.
  • Let the burrata come to room temperature for maximum creaminess. Tear gently into pieces and place over the tomatoes.
  • In a blender or food processor, combine the peach, olive oil, vinegar, honey, salt, and pepper. Blend until smooth and creamy. Taste and adjust seasoning as needed.
  • Drizzle the peach dressing evenly over the tomatoes and burrata. Scatter fresh basil leaves on top. Optional: sprinkle with toasted nuts or drizzle with balsamic glaze for extra flavor.
  • Serve immediately as a refreshing starter, light lunch, or side dish.
