4-5ripe tomatoes (heirloom or vine-ripened)
2balls of burrata cheese
Fresh basil leaves, for garnish
Optional: arugula or mixed greens
For the Peach Dressing:
1 ripe peach, peeled and pitted
2Tbsp extra-virgin olive oil
1Tbspwhite balsamic vinegar or apple cider vinegar
1tsphoney or maple syrup
Salt and freshly cracked black pepper, to taste

Instructions
Wash and slice the tomatoes into even pieces. Arrange them on a large serving platter or in a bowl.
Let the burrata come to room temperature for maximum creaminess. Tear gently into pieces and place over the tomatoes.
In a blender or food processor, combine the peach, olive oil, vinegar, honey, salt, and pepper. Blend until smooth and creamy. Taste and adjust seasoning as needed.
