Equipment

  • 1 Oven-safe skillet (about 10-12 inches)
  • 1 mixing bowl
  • Whisk
  • Cutting board and knife

Ingredients

  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 small bell pepper, diced (any color you prefer)
  • 2 Tbsp avocado oil or olive oil
  • 8 organic eggs
  • 200 grams frozen green peas (about 1 cup)
  • 100 grams eta cheese, crumbled (about 1/2 cup)
  • 2-3 Tbsp Fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large, oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and cook, stirring occasionally, until it becomes translucent and soft, about 3-4 minutes. Add the minced garlic and diced bell pepper to the skillet. Continue to cook for another 2-3 minutes, until the bell pepper is tender and the garlic is fragrant.
  • Stir the frozen green peas into the skillet with the onion, garlic, and bell pepper. Cook for an additional 2 minutes, allowing the peas to thaw and heat through.
  • In a large bowl, crack the eggs and whisk them until well combined. Season with salt and pepper to taste. Crumble the feta cheese to the egg mixture. Pour the whisked eggs with feta cheese over the vegetable mixture in the skillet, making sure the eggs are evenly distributed.
  • Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the frittata is set in the center and lightly golden on top. A knife inserted into the center should come out clean.
  • Remove the skillet from the oven and let the frittata cool slightly before slicing. About 15 minutes. Garnish with fresh parsley before serving for a burst of color and flavor. Serve warm or at room temperature, and enjoy!
